French Onion Soup with Gruyère Croûtes
This is probably the most famous and popular of all onion soups. It was traditionally served as an early morning meal to the workers of Les Halles market in Paris. Mama's version is made with yellow onions cooked in butter with fresh herbs, dry white wine and homemade beef stock. The croûtes are homemade with garlic and dry mustard. Mama brings the soup to your door with coarsely grated Gruyère cheese. Some assembly is required, or in other words, you'll have to toast the cheese on top yourself, but you won't find a more tasty or authentic French Onion Soup in Knoxville!
If you'd like a vegetarian version made with mushroom broth instead of beef stock, just let Mama know.
