Tom Kha Gai (Thai Chicken Soup)
By special request, Mama is making Tom Kha Gai. Since this is Mama's personal most favorite of all soups, it wasn't hard to twist her arm. This spicy, hot, sweet soup is the "chicken noodle of Thailand." Chicken and mushrooms in a sweet coconut milk broth have a perfect balance with the ginger, lemon grass and kaffir limes. Smoky chiles give it a little color and heat, but it won't burn your biscuits either.
